My husband bought me this book for my by Silvana Nardone called Cooking for Isaiah. I was only dairy free at the time and didn’t pay too much attention to it because I ate wheat.
Her flour blends are the basis for any of my baking. I have tried many of her recipes with much success. It has been interchangeable for wheat flour cup for cup all the baking I have done.
Silvana’s All Purpose Flour Recipe calls for xanthan gum, salt, white rice flour, tapioca starch and potato flour. I used to use corn flour instead of potato but now I have switched to potato since being advised to be off of corn.
